Ms. Joan’s Chicken Fried Steak with gravy
Chicken fried steak, sometimes known as country fried steak, has long been a Southern favorite, especially in Texas. Don’t be fooled by the name. This dish has nothing to do with chicken but is made with tenderized round steak.
*****Ingredients*****
Mix 1/2 cup Bisquick baking mix with 1/4 teaspoon salt and 1/4 teaspoon black pepper in a small bowl.
Transfer this mixture to a dinner plate. reserve the remaining bisquick for gravy.
Beat eggs in a small bowl. Add eggs to the heavy cream and blend thourghly. transfer this mixture to a dinner plate.
Prepare finely ground saltine crackers by grinding in a small food processor or by crushing them with a heavy rolling pin. Transfer the finely ground crackers to a dinner plate.
Dredge steaks in Bisquick mixture, then egg mixture, then cracker crumbs. Sequence is dry, wet, dry.
Preheat a 12 inch skillet to a medium high temperature.
Add 1/8 cup of Crisco to the pan. when Crisco has melted add two of the steaks to the pan. Cook 3-4 minutes until browned, turn the steaks over and cook another 3-4 minutes until done. Repeat this for the remaining steaks. Remove steaks to a warmed plate.
Add 1 tablespoon of Crisco to the skillet adn saute sliced onions on medium high heat until golden, approximately 3-4 minutes. remove sauteed onions t warmed plate with steaks.
Prepare gravy by melting 1/4 cup butter in the skillet with the drippings at medium heat. When butter has melted add the 1/4 cup of Bisquick baking mix alond with 1/2 teaspoon salt adn 1/2 teaspoon white pepper. Wisk Bisquick mix with butter until smooth and slowly wisk in the 2 cups of warmed milk until gravy thickens.
blend the hot sauce adn worchestershire sauce in the gravy before serving.
Serve steaks with opnion slices and smothered in gravy.
Accompany with mashed potatoes.
