Homemade Hash Brown Potatoes
We love our potatoes in the South just about anyway you cook them. Fried, stuffed, baked, boiled, hashed or mashed. Here is a dinner time favorite of LoneStar Travelers.
Pepperoni is stirred in for added flavor.
*****Ingredients*****
Cover potatoes with water in pot, bring to boil, reduce heat and cook additional 8 minutes in uncoverd pot.
Drain potatoes and immediately submerge in ice water to stop further cooking.
When cool cut potatoes into chunk size pieces.
Add olive oil and butter to skillet. Add potatoes and brown over medium-high heat. Add scallion onions and stir in until slightly roasted in appearance.
Add sliced peppperoni, mixing in well.
Add remaining ingredients stirring in until potatoes are thoughly coated with spices.
Serve and sprinkle with freshly chopped parsley.
