Southwestern Sirloin

Texans love their beef. They also love their backyard barbeque grills. Rain or shine the beef goes on the grill. This tasty seasoning will have your steak sizzling and keep your kitchen cool.

Add charcoal to your barbeque grill and light in preparation for cooking.
Coat the steak with the olive oil and red wine vinegar.
Combine cumin, chili powder and oregano and sprinkle on steak. Rub the seasonings into the meat and press in the minced garlic.

When the coals are hot place the steak on the grill. In 5 minutes turn the steak over and place a quarter of a turn clockwise back on the grill. In another 5 minutes turn the steak over again and give it another quarter turn. Again turn over in 5 minutes with another quarter turn.
Take the steaks off the grill when your meat thermometer reads 150 degrees. Cover loosly with foil.
The steaks will continue to cook another 5 minutes after they are off the grill t reach medium temperature.
Garnish with fresh herbs from your garden. A sprig of rosemary or a bouquet of thyme.
